My Hubby’s (also now known as Captain Caveman!) birthday was yesterday. He’s been working ungodly hours lately (meaning LOTS!) so I wanted to make him a special meal on the one day he managed to get home at a decent hour.
Steak and bacon green beans with mushrooms and onions were on the menu, with carrot cake whoopie pies for dessert. [All Paleo, of course!]
I get our grass-fed beef in bundles for variety and best price. Lakewinds gets fresh steers from Iowa every week and butchers them to order within days. It’s always good, but I was absolutely gobsmacked when I opened the ribeye steak packets – they were a full two inches thick! Whoa!
Take a gander at these! Just one fed all three of us for dinner. Wowsa. That’s an 11″ diameter pan, btw…
I’ve found that my food preparation has greatly simplified since going Paleo. Rather than a complex seasoning, marinades or other techniques popular in “conventional” kitchens, I prefer to let the [quality] food speak for itself. So the steaks were seasoned only with Himalayan pink salt and grilled on medium 10 minutes each side. Soo tender and tasty!
Sauteed the green beans in bacon fat and added some (pre-sauteed) mushrooms & onions – a staple in my fridge – and a bit of bacon crumbles atop to complete.
These Carrot Cake Cream Pies from Primal Cravings are about the most complicated food item I’ve prepared in a while. Since we cannot tolerate dairy (cream cheese) I made the maple cinnamon frosting from Paleo Indulgences instead. Mmm.. We didn’t even get the chance to insert and light a birthday candle!
Carrot Cake Cream (aka Whoopie) Pies
This recipe made the perfect cakes for this treat – consisting of almond butter, eggs, shredded carrots, raisins, maple syrup, cinnamon and baking soda. Paired with maple cinnamon frosting, it was a perfect Fall Birthday treat!
I used to be a regular frou-frou coffee drinker before I had my son. In summer I really loved the Starbucks Frappacinos. Since going dairy-free, they are out. *sad face*
I got a craving the other day and set out to create a dairy-free replica. I think I came really close! This recipe can also be used to make coffee ice cream, freezie pops and even a mocha whipped topping!
Dairy-Free Copycat Frappucino
1 (13.5 oz) can coconut milk
2 tsp vanilla bean paste
2 tsp instant espresso powder
1/4-1/2 cup maple syrup
Mix all of these in a blender (or with an immersion blender as I did) and chill.
Top with coconut milk whipped “cream” if desired.
I filled my ISI mini-whip with this stuff and made mocha whipped topping with it. Mmm…
And poured some into popsicle molds for some grown-up frozen treats. Yummy…

Lakewinds Co-op hosted the Gluten-Free Round-up this afternoon with samples of gluten-free products throughout the store. I found a few new treasures at the sample tables: CocoAmour Lemon Poppyseed Macaroons, Ferndale Farms Cranberry Turkey Sticks and the Hail Merry Miracle Tarts!
I have long been a fan of the Cherry Coconut Macaroons, and the Lemon Poppyseed flavor is an excellent addition to the repertoire.
Those Cranberry Turkey sticks were tasty! A lot like Tanka Bites, without the paprika (nightshade) that gives me trouble. I left with a couple packages in my cart!

Well, let me tell you: the Meyer Lemon tarts are the BEST Paleo treat I’ve had – EVER!!
No kidding. And I am not usually a fan of lemon or tart desserts. I was blown away.

I have a box en route filled with a selection of Brownie Bombs, Mac Attacks and Mustang Bars. (I would have ordered all four choices, but goji berries are nightshades and must be avoided due to my autoimmunity issues.) Valentine’s Day is our 14th Wedding Anniversary, and an extra-special day should be commemorated with an extra-special meal and dessert. I believe the Brownie Bombs will be very fitting indeed.

I generally avoid Paleo baked goods and similar treats due to the added sweeteners and the inflammation and habits they incite. The “sweets” in our home consist primarily of whole fruits (both fresh and dried), an occasional bit of LoveBean Fudge and honey in our tea.
This recipe changed that.
Moist and tasty, just like regular banana bread – but without any grains OR added sweeteners! I’ve made it twice now, the second time adding some raisins for good measure.
My family loves this so much I just had to let George know via Facebook that his creation was a huge hit:
