Oh Crap! It’s snowing again after raining all day.

This morning when I heard we have another 6″-9″ of snow expected overnight, I was so done. I don’t know if I can handle this anymore. I’m gonna go bonkers if I don’t get some sunshine and real vitamin D very soon! It’s April 22nd – EARTH DAY for goodness sakes!!
So what does a cabin-fever-stir-crazy Minnesotan make while yearning for sunshine?
Mint (coconut milk) Ice Cream! Hahahaha! Yes, a lack of sunshine can make you delirious.
BUT this recipe turned out to be both simple and Fan-Freakin’-Tastic!!
The real reason I whipped this up today is that I was scheduled to pick up a beef bundle and had to clear the (ice cream) freezer bowl out to make room. In my haste, I used a very simple recipe – omitting the extras I had in my frozen treats recipe last week. It turned out even tastier than the So Delicious brand we’ve been eating so much of lately. Yum-Yummy!
Mint Chip (Coconut Milk) Ice Cream
2 cans coconut milk
3/4 cup organic sugar
1 tbsp Frontier mint flavoring
3/4 cup mini chips
Warm the coconut milk and sugar in a saucepan just until sugar is dissolved.
Remove from heat and add mint flavoring. Chill.
Follow ice cream maker instructions, adding the mini chips near the end – just to mix.
Freeze. Enjoy! Mmm…
