Spring Cleaning time is approaching and I am starting with the cupboards and pantry this year. I had a few partial packages of baking goods to use up, so I made some bite-sized snacks for lunches, etc.
I happened to have some shredded coconut, raisins and chocolate mini-chips, but one could add nuts, seeds and dried fruits of any kind – and I have in the past. It’s all held together with coconut oil and a drizzle of maple syrup. A dash of salt adds that extra “something”. Cute mini-muffin cups make them extra-fun and a bit neater to eat – everybody loves that!
As with many of my recipes, I just eyeball the ingredients and taste-test along the way.
For this mix I combined the shredded coconut, raisins and Enjoy Life® mini chocolate chips in a bowl, added a drizzle of maple syrup, a dash of Himalayan salt and just enough melted coconut oil to hold it all together once chilled. A small cookie scoop made quick work of portioning it into the mini-muffin cups. [Chill and store in the fridge.] Yummy!

I have a box en route filled with a selection of Brownie Bombs, Mac Attacks and Mustang Bars. (I would have ordered all four choices, but goji berries are nightshades and must be avoided due to my autoimmunity issues.) Valentine’s Day is our 14th Wedding Anniversary, and an extra-special day should be commemorated with an extra-special meal and dessert. I believe the Brownie Bombs will be very fitting indeed.

My son celebrated his 8th birthday 3 times in as many days. So what does a Paleo Mama feed a birthday boy? Meat, of course! And chocolate.
His first party was Saturday. After a hearty lunch of grilled chicken and broccoli, we went to see the animated movie “Wreck-It Ralph” with 3 of his best friends. The kiddos enjoyed popcorn and sodas during the movie, and mango sorbet afterward.
The Grandparents came to visit on Sunday, and we went out to eat at one of our favorite places: Axel’s in Chanhassen. Snow was coming down “cats & dogs” (we ultimately got an entire FOOT of snow), so we were very glad it’s nearby. They have a good gluten-free menu selection, and we enjoyed salmon fillet with broccoli and bacon-wrapped scallops over risotto followed by a (GF) flourless cake known as “Death by Chocolate”. It most certainly is. Rich, moist and fudgey enough to put you in a coma.
Monday was his actual birthday. Wow, the big 8. He came home from school with 2 birthday pencils, ready to eat. Melt-in-your-mouth tender Primal Beef Stew was on the menu, followed by my special Chocolate Coconut Milk Pudding. A super-rich meal. We lazed about the living room playing half-heartedly with Legos for the rest of the evening.
