My Baby Boy is ONE!

BLOG 1st bday 5

The cliche is so true: time flies.

I cannot believe it has been a year since this adorable baby boy joined us in this world.
I love him with all my heart.

What to serve a Paleo Baby on his birthday?

Why, grilled meat and veggies, of course!
Burgers and sweet potato fries followed by a coconut flour-based vanilla cake coming right up!

The cake recipe is from Paleo Indulgences.

Happy Birthday Meme

Somehow, I don’t think 48 candles will fit on a gluten-free birthday cake as they tend to be on the small side. LOL

I certainly don’t feel this old.  How did that happen?!
Thank goodness for living Paleo.  It has given me a new life full of energy.

So grateful for all the blessings I have in my life on my 48th birthday.  🙂

Pamela’s Paleo Life Blog Turned 2 Today

A lot has happened in the two years since I began writing this blog.

Thank you so much to all who read and support me here at Pamela’s Paleo Life.
I have not posted much since Spring, as I have been quite busy living my life in the real world – as have so many of the Paleo bloggers this year.  Sometimes the internet can be a drag and you just need a break.

Besides, having a baby is rather all-consuming – at any age – but especially in your late forties.

I do intend to post about Paleo Pregnancy and being an older mother with the intention of sharing hope with others.  It may take a little time, as we are still in the sleep-deprived state of newborn bliss.  Max is nearly three months old now and sleeping more, but he has impeccable timing and wakes us just when we reach our deepest sleep state.  Oy.

We also recently lost my father-in-law to pancreatic cancer, so there have been two really big changes to our family this Fall.

Anyway, here’s to two years of blogging!

Birthday flowers and cake

Vanilla cupcake and strawberry frosting recipes from Paleo Indulgences

We couldn’t have had a more beautiful day to celebrate here in Minnesota.  Sunny and mid-70’s was perfect for tea al fresco at the local Farmhouse coffee shop and my son’s all-school picnic lunch.  Surprised him with our favorite sushi takeout and made his day.  🙂

I was also treated to birthday balloons and flowers from family, along with a Paleo strawberry shortcake birthday cake.  Has anyone else received gifts that weren’t really for them, but for their kid(s) or spouse?  LOL My wrapped gifts were Lego mystery minifigures and a little blankie bear.  Hmm…

5 1/2 months (22 weeks) pregnant with son Max – YES at the age of 47!

Finished the day with our annual (4+ years now) traditional dinner at Axel’s in Chanhassen.

I am still in denial about being 47.  There is NO WAY I can be that old!  Must be a mistake…

Celebrating 13 Years with My Kitties

My kitties turned 13 years old this past weekend on March 29th.  Time sure flies!

Highlights from the first 12 years

To celebrate, we got the girls some new Cat Faeries nip toys and fed them raw egg yolks in addition to their grain-free kitty kibbles and freeze-dried raw food.  These Paleo Puddies love their raw egg yolks!!  They slurked them up lickety-split!

When presented with their gifts, Panda sniffed each one, clawed and swiped her choice away to play.  She chose the oyster – so Raven got the fried egg.  (Snooze and you lose!)  Some of their most “well-loved” toys include the shrimp sushi roll, birds and the oyster.  The catnip in Cat Faeries Legendary Cat Toys is especially potent.  There’s nothing else quite like it.

Some of their most “well-loved” toys! Rabbit recently bit the dust – they actually shredded and unstuffed it!

Happy Birthday Kittens!  Looking forward to many more years together.  <3

It’s Party Time!

This was us 9 years ago, awaiting the arrival of our son – a big 10-pounder!

9 months pregnant - Thanksgiving 2004

After 39 hours of labor and a c-section, we had our boy.
He was so big the nurses dressed him in a 3-6 month sized sleeper – and it fit!

Alex 12-12-2004

We like to tell him the story of how he got revenge on the doctor and nurses for making him wait so long to be born.  After they lifted him out, he piddled on every one of the medical staff in the O.R. (about 6 in all)!  Mommy and Daddy were the only ones unsoiled.  He was literally pissed!  LOL

Here he is now – still a very tall boy.

Santa 2013

Happiest Birthday to my precious boy!  He is our miracle.  We had lost two before he came along (and another one this Spring) likely due to my Hashimoto’s and Celiac conditions.
His birthday is a most joyous occasion, worthy of special celebration.

Birthday Balloons

He has rediscovered Transformers. Cool balloons, huh?

I’m making one of his favorites, Paleo Taco Pockets for dinner.  Trying a new variation by layering the dough and taco meat in bacon-greased muffin tins.  Some greens on the side and dessert of vanilla cupcakes with buttercream frosting (Paleo-ized with ghee and coconut milk, of course!) and cookie dough bon-bons.  Yummy!

Singing “Happy Birthday”.

Happy Birthday 3

On a related note…Just this week, he did a class presentation on his family history.
He learned a lot about where he came from.

Window 2

The presentation was on December 6th, St. Nicholas Day.  Here I am holding up the wooden shoes my father brought back from the Netherlands in 1962 while in the Navy.  As my family is from the area bordering the Netherlands, we celebrate by placing wooden shoes out at night for St. Nicholas to leave treats (for good children) or coal.  This pair held a small Lego Christmas Train Kit and a hat.

Window Week Poster (final)

Our son is half German and half Finn.  We recently participated in the National Genographic Project to get our DNA history, and the findings confirm that we are who we think we are.

This is a fascinating project.  Check it out!

Blog Birthday!

One year ago today I made my first post here at Pamela’s Paleo Life with the hope of inspiring and encouraging others to regain their health via the Paleo lifestyle.

Many Thanks to all who read and follow this blog!

I appreciate all of you and hope to be a source of relevant information, inspiration, encouragement and entertainment for many moons to come.  My heartfelt gratitude to those who came before and showed me the way back to health so I could pay it forward.

Time to celebrate!  Where’s the (grass-fed) beef?!
