Made a yummy salmon salad atop a bed of lettuce with rice crackers on the side.
I had some leftover salmon filets and two hungry guys to feed. Quick! Whipped up a jar of homemade mayonnaise with the help of Orleatha Smith’s video, sprinkled in some lemon juice, salt, minced parsley, scallions and voila! – lunch in a snap. Gone in no time!
Alex layered the filling between several (like, 5!) of the rice crackers and called them his “Cracker Stackers”. Kids sure make lunchtime fun. LOL
